Hey BOS gang, what did you just eat and/or drink?


Yup, it was Taco Tuesday at the Parsnipity household. That meant leftover taco meat on a bed of veggies for lunch. I only happened to take a photo to share with my sprout, who was left home alone for a bit and who proceeded to make herself a salad of… wait for it… sauteed carrots with soy sauce, lettuce, celery, and cotija. Kid has taste. Odd taste, but taste nonetheless and I applaud her initiative. Now, just to teach her to take a photo of her creative efforts. Oh wait, I haven’t broken down and gotten her a phone yet. D’oh.

Made a (very late - lost track of time) dinner tonight and cooked up one of the Sriracha tofu blocks I picked up at Trader Joe’s. Cubed it and threw them in the toaster oven at 400 with a little PAM spray and plated it 20 minutes later accompanied by some spicy mayo I threw together as well as some spicy kimchi. T’was really good considering how lazy of a dinner it was

I had never purchased the sriracha tofu at Trader Joe’s but will be grabbing it more often - if anyone has any tips on how they prepare it I’m all ears

I’ve see the sriracha tofu but have never tried, which is weird, considering how much I love tofu. I’ll pick one up once I’m home from vacay.

B is generally not a fan of tofu, but he’s liked it when I air-fryer it it and crisp it up. Maybe I’ll try that treatment. In any case, I’ll report back.

I had a lazy dinner too, except mine was a bowl with brown rice quinoa base (bought this from Costco - pre-made, reheat), roasted broccoli, and then some fried up Korean luncheon meat. I swear I normally make healthier lazy bowls, but the Korean luncheon meat has been sitting on my counter for a while.

Off the track sidebar: Fell upon a random vlog from a Hong Kong food vlogger, and he was comparing different brands of luncheon meat. Was surprised when he did his blind taste test at how varied his feedback was - I assumed everything tasted like spam. By his ratings, Spam was one of the lower rated products, due to being exceptionally salty and little pork/ham flavor. This sparked an attempt to try to find some of the brands he tried to see if these are in fact better than the Spam I grew up with. The Korean “premium” brand is Dongwon - still salty, maybe slightly better pork flavor.

To each their own, but the only way a canned luncheon meat product shows up in my kitchen is in an alternative universe.

That’s ok. More spam musubi, fried rice, budai jjigae and other foods for me then.
