This is why I follow Hungry Onion! I’ve lived in Southern California for 50 years, so my exposure to “tortilla” is obviously Mexico-centric. In all that time I’ve never known the word to refer to anything other than the conveyance of taco or tostada fillings, or a wrapper for a burrito. Cut up and fried they’re ‘tortilla chips’. The omelette is a ‘Spanish omelette’. I’ve been to Europe a few times but never to Spain. Perhaps if I had I’d have some knowledge of a broader use of the word.
Interestingly Google pages and Wikipedia must have also lived here as I wasn’t able to find any other definitions there either. Just goes to prove that you don’t know it all even if you think you do. 
Those seem like pretty good instructions! But I like to include onions.
