Your Favourite Taco

Tonight my favorite taco will be salmon tacos topped with sauteed rajas, a cabbage & carrot slaw, and home grown and pickled jalapenos. Won’t be for another couple of hours, but I’m salivating at the thought!

I have a salmon fillet. Maybe I will marinate, grill,.and taco it :drooling_face:

Have recently switched from the classic/simple cabeza taco (stewed head meat, cilantro, onions on two corn tortillas) to a super cabeza (above + sour cream and shredded white cheese, grilled onions) and of course whole jalapenos with either. No pics because I tend to attack as soon a served.

I griddle my tortillas for quesadillas and tacos. Gotta have that char flavor.

I think an unprepped tortilla is the reason crappy, wannabe Mexican places suck. can’t take a few seconds to prep that thing. Weak product is the result.

A favorite here has salmon, avocado, roasted red peppers, and feta, seasoned with black pepper and a Mexican adobo blend.

Soft chorizo taco, no lettuce, shredded cheese, or salsa, with radish slices and grilled spring onion on the side.

As much I want to eat this plate again and again, I’m really jonesing for a lime of that quality. Mexico, thanks to your volcanoes, your produce is generally fan…tastic.

That lime does have an amazingly vibrant color!

100% soft corn tortillas.

The only two fillings I outright reject are pollo and cuarito. All other will depend on the source. My favorite place for a long time until it closed had a killer taco de cabrito, though I don’t see it much elsewhere.

Tacos are really the only way to eat goat, because otherwise they leave all the bones in, which makes it impossible to eat (at least for me).

roast goat Greek style isn’t full of bones :slight_smile:

I was thinking of goat in Mexican restaurants (and also Indian restaurants, at least in the one I went to a couple of days ago).

In general I prefer meat left on the bone. Of course it’s more difficult to eat that way. But I think the word ‘impossible’ is very strong.

Some birrierias will serve their goat simply ‘carnaza,’ off the bone.

i mentioned Greek roast goat, because Indian goat curry and Carribean goat roti often do contain bones in my experience.

I don’t like having to take the bones out of goat roti.

(just suggesting another way to find goat without bones )

Carnitas and Al Pastor are my go-to tacos. If I try a new taco place, those are my benchmarks.
I’m fortunate to have two places close to me that make them, and both are excellent, clean, and not so expensive.
