Annual PA Dutch chicken corn soup day today! It’s the end of the local corn season, so it had to be done.
One whole chicken, about 18 ears of corn, an onion, a bunch of curly parsley, salt and pepper.
I scaled down a bit from last year, but I still have 11 billion quarts of soup, and virtually zero available freezer space. I’ve worked up a scheme to store some in neighbors’ freezers in exchange for some fresh soup of their own, but I still have a storage problem. I have a few days to get it into the freezer, so I’ll be doing some very fancy re-arranging and decision-making in the next few days ![]()
