Roasted peppers are good frozen as well. When I have an abundance, I often lightly coat with olive oil; roast them in the oven until the skins blister and loosen; close them in a plastic bag to steam; slide off the skins; slice and remove the seeds; freeze in small containers or plastic wrap bundles. Thaw and use on pizza, salads, whatever….
Chorizo! I usually make this with soyrizo and use just 3 cans of beans if not making them from dried. Anyway…it’s easy, delicious, makes a lot and freezes well…

Red Potatoes and Raspberries on sale – starting tomorrow. Other than that, there isn’t much I can afford/use this week. I still have a good supply of brats in the freezer (and some chicken), so I’ll be leaning on them.

Brats go perfectly well with potatoes! When I make potato salad I toss in whatever protein I have handy. In the past I’ve used kielbassa, hot dogs, whatever sausage I have going, smoked mussels and smoked oysters.
Other potato ideas include scalloped potatoes and hasselback potatoes both would probably taste great with cheese on top. Or you can make stuffed potatoes au gratin or cheesy potato soup.

I think the potatoes I purchased last week (on sale) were a bit old, as they were about to go bad. Since I don’t throw food away, I decided to turn them into Gnocchi and freeze it for a later meals. Once they freeze up a bit, I’ll transfer them to a freezer bag.
Ouch… I’ve been substituting ground turkey for ground beef in some of my dishes. Walmart has it for $1.99 per pound. I’ll add a little Worcestershire Sauce and Liquid Smoke to the ground turkey – it helps a little, but it definitely is not ground beef.

Thinner burgers --growing up my Dad got 6 burgers per pound, stretched with 1 egg and 1/4 C oatmeal or crushed saltines - and more side salads. I found a meat market that sells frozen ground beef at $6.80/pound, if you get 5 pounds at a time. It’s not on my usual driving paths, so an extra trip but only once a month.
Costco will sell you a 10 lb chub of ground beef (still in factory casing) for a lower price since they don’t have to break it down. You will have to break it down. Ask the butcher, also might be lean as in 90-95% lean…like $2 less per pound.
Not much on sale this week, except potatoes, onions and cream cheese. I was thinking about trying to make some homemade ravioli. Just wondering if I can mix cream cheese and a can of spinach I have in stock (as a filling)?? Maybe add an egg and shredded cheddar as a binder (to the filling)??
Friday there is a one day sale on Tuna (again) 10 cans for $5. Sunshine really liked these Tuna Cakes I made, so I’d like to try to stock up on some more canned tuna.
I’m going to set my alarm clock, so I get there when they open. (fingers crossed I get my 10 cans)
For some reason, I’m feeling very uneasy about our pantry and food supplies. I can’t put my finger on it, but I just feel nervous – like something bad is about to happen. Any who, it can’t hurt to have a little extra canned food (protein) in the pantry.

See thread below from Caitlin, that’s just one reference to using Boursin for sauce (it’s also great in eggs), then link to “homemade boursin” recipe. I make mine with fewer herbs and goat cheese due to dietary sensitivity. I suspect you could use the spices you have/like.
Perhaps similar: I’ve been feeling anxiety about availability and price of food. I buy mostly protein and veg/fruit, prices keep going up, sometimes down but I notice up more, it’s stressful! Yesterday was elated to find 6 avocados at Costco for $5.99! A few months ago same avos were $13.99–I kept passing them by. Fall is avocado season; in addition the supply chain is suffering and we’ve been watching pricing shift for a long time now… wishing us all well, and I hope you’re also seeing good in-season produce pricing in the desert!

I’m still learning how to make ravioli – it is still very much a “work in progress”. I’ll make a couple small test batches and get feedback from Sunshine. If its a fail, she definitely let me know (LOL)!!

I’ve been feeling this way ever since covid and seeing the voids in the grocery store … waiting for the other shoe to drop. Even before that, the 2007 financial crisis was hard on my household. It’s made me extra cautious - thus our extensive garden. What’s next? Who knows. The Secret Life of Groceries was a good read. Self-reliance is a life-skill and (IMO) a good thing. Trust in God, but tie your camel (at least, that’s what I always say).
I ordered the book, but other bedside reading keeps getting in the way of starting it. After I finish the pile of The New Yorkers, I’ll get to it.
