Greetings, People.

Gobble gobble!

Cooking for two adults in the PNW:

THUR: Turkey, swiss, and bacon sandwiches on homemade cranberry-pecan loaf. Convection oven fries. Umami gravy. Carrot salad. Pickled beans, onions, and blueberries (each served separately). Pumpkin pots de creme and chocolate cookies for dessert.

FRI: Repeat.

SAT: Repeat.

SUN: Not enough spuds? Scallion scrambled eggs and some kind of potato dish. If feeling brave, I’ll try my hand at Recipe Tin Eats’ fondant potatoes (as recommended elsewhere on this site – but (with apologies) I can’t recall who posted).

MON: Steak and leftover potatoes.

TUE: Umbrian lentil soup with pasta and greens. Lamb sausages.

WED: Salmon Caesar.

THUR: Nigella’s Spanish chicken and sausages (with yet more spuds!).

Hello friends I’m in the home stretch of a busy fall. My last watercolour class is this coming Tuesday and my last drawing class is the following Sunday. I also have three weeks until Christmas vacation! I will be taking off the last two weeks of December so I should think about what I would like to do while I’m off. In the meantime this is what I have planned for the upcoming week:

Today: My takeout lunch today was a meatball sandwich from a nearby deli. I will have a salad of some sorts for dinner tonight.

Tomorrow: The seniors centre down the street from me is having a Christmas bazaar so I will head down tomorrow morning hoping to arrive when the doors open at 10:00. I will spend the afternoon at home doing laundry and meal prep for the week so I can have the entire day Sunday to myself. I plan on having scallops with edamame and soba noodles for dinner. I had clipped the recipe from a community newspaper a few years ago and it doesn’t appear to be online. So the recipe calls for dressing cooked soba noodles with soy sauce, lemon juice, sweet chili sauce, and sesame oil. The scallops are steamed for a couple of minutes and the edamame is boiled, they are placed on top of the soba noodles and the dish is garnished with sesame seeds, green onions and cilantro.

Sunday: I have a drawing class in the morning then off to the farmers market for lunch then shopping for missing ingredients. I might have time for a short museum visit after, I’ll see how I’m doing for time. I will have an asparagus potato salad for dinner.

Monday: Probably risotto. I had planned on having a pork and green bean stir fry from recipetin eats but I finished the beans last night so I will have to pivot. I have ingredients for an asparagus sundried tomato risotto and a leek and sundried tomato risotto so I will randomly pick one when I get home from work on Monday. :slight_smile:

Tuesday: My last watercolour class. I have half a mind to skip it. I missed the first one since I was at a sleep clinic but after diligently going to class each week I have not been enjoying myself. I just don’t like watercolours - they are too difficult for me to create a painting. Also, each week the teacher gives us a print out of a water colour (they are all the same picture). She mounts her copy on an easel then places a blank piece of paper beside it then draws what she sees and we follow along. I don’t feel like I’m learning anything. Attendance has been dropping off each week and every time I go to class we’ve lost a couple more students so I’m wondering if the teacher is the cause for the low enrollment. Whatever I decide to do, I will have a serving of dal that I have in the freezer for dinner.

Wednesday: Fried cabbage and noodles.

Thursday: Spaghetti with a marinara sauce, salad of some sorts on the side.

Thanks. Sorry it took so long but it’s been a long week. I’m presently trying to set up a CPAP machine for the first time and I never thought such a small machine would be so complicated…

Today: Thxgiving leftovers, i.e. youvetsi, fasoulakia, fennel salad, maybe some of that orange almond cake, DEF some biscoff ice cream — tho I likely can’t be arsed to make that dumb berry sauce.

Tomorrow: either mapo tofu with ground lamb & the remaining bok choy from who knows when, or the NYT lemony shrimp & white bean stew.

And that’s a wrap for November.
