What are you baking? December 2025

One of the Chowhounds I know in Toronto often made pandan cakes for our Cake Days.

2 coffee shops near me in Toronto sell Pandan croissants. I think they are all using frozen Pandan leaves.

I’d like to make these. For a full recipe how much chopped pecans and dried cranberries should I add?

I wonder if TJ sells apple cider.

I used a packed quarter cup of each for the half recipe, and would double that for the full recipe.

As a side, the muffins held up well overnight in a sealed tin. They were neither gummy nor dry this morning, but just right. I’d happily make them again.

The chilli crisp cheese apero bread was part of our appetizer spread, and the tiger / marble cake was joined on the dessert platter by plum cake, strawberry tres leches cake, baath (goan coconut semolina cake),and rose cookies made by various friends.

Neighbor #2 asked me to discontinue breakfast. Apparently, she is gaining weight and wants just lunch and dinner.

So, I made up some whole wheat “Bread Buttons”. If she gets super hungry before I bring lunch to her, she can have a bread button or two to stave off any hunger pangs.

Nordic buns. Basic enriched dough spread with pistachio cream instead of with cinnamon. Sprinkled with pistachio dust and pearl sugar. Divine. Recipe for dough is from BUNS by Louise Hurst.

Hmmm. Regular cocoa, or Dutch process? I wish they would specify stuff like this. Any guesses?

I think either would work fine. Personally, I’d use Dutch process.

Have you tried the Heather Christo recipe? She puts dried cranberries, I sub dried tart cherries. I’m pretty sure it calls for Dutch, I love Valrhona.

Thanks! My gut says DP as well. They also don’t specify on the butter (salted or unsalted). I’m going with salted.

Thanks for the reference. My plan is to first try the USC recipe tomorrow, and then DL’s on Tuesday (he also calls for DP). Hopefully one of those will work out for me.
