Iowa Family Pancake and waffle mix
2 C unbleached flour
1/3 C corn flour (finely ground corn meal)
1/4 C whole wheat flour (also finely ground)
2-3 tsp Baking powder per cup of dry ingredients (flour, corn meal, whole
wheat) ( note - this is 2 Tbl plus 1 ½ tsp.)
1 tsp salt
1-2 Tbl sugar (I use2 Tbl).
When you make the pancakes
per 1 C (me) or 2 C (sister-in-law) of flour mix
add 1 egg
add 1C milk
optional - add raw wheat germ-- about 2 T to the flour mix
For waffles – light and tender
1 cup mix
1 egg
1 Tbl. vegetable oil
1 cup milk
about ½ cup of batter will fill most waffle makers.
optional - add 1/4 C chopped pecans to batch or about 4 pecans per waffle square as you pour each
