Demeyere Plancha

Apparently, Demeyere discontinued the Atlantis 7-ply plancha / griddle? Can someone summarize the different sizes that were available and what I should expect to spend if I find a used one?

There was a lot of info on CH about the Demeyere planchas, both the 7 layer and the 5 layer ones. I have a smaller 5 layer one. The first time I used it, I think the retained heat messed up the electronics on my stove - the display showed an error message and nothing worked. I had ordered a new .stove just the day before, so it was an oh well event. The plancha made good cheesesteaks.

I guess in theory, if you had an induction stove where two plate areas were not designed to be connected, you might end up heating some surface that was never supposed to be heated.

Not relevant to Demeyere, but I am pondering this one for use over gas burners:

Aluminum scratches easily and I would have concerns about aluminum leaching into food, especially at high griddle temperatures.

This wasn’t an induction stove. My new one is, however…

Aluminum can be seasoned, making it much less prone to sticking than SS. I thought the aluminum scare had been debunked.

I have both planchas. The larger one is perfectly sized for my 36" gas cooktop/range, which has matching burners. I have used it for everything from pancakes to steaks for a crowd. The smaller one isn’t a great match for my 60cm induction cooktop. I think we’ll need to upgrade to a bridging unit in the next remodel but I really haven 't used it that much.

I cannot confirm on ply thickness but I have seen some other brands in my musings…with the exact handle type as found on the Dem. Same handle with the -setscrew- on the bottom. Shape-Profile to be like kindness. Unless it was made by Dem and Rebranded.

I get that Demeyer’s brand offering now incorporate a rivet line…however, never understood why their placha had 2 itty bitty setscrews on their handle design

well, since some people still believe the earth is flat, no, it hasn’t been.

I will say that at a medical conference I asked an Alzheimer’s researcher and he said ‘there is no evidence that using aluminum cookware makes a bit of difference.’

Phew! That 5mm aluminum would make for an excellent, even heating griddle.

It was. Yet it lives on—sorta like vast iron being even heating.
