COD [SALMON] CAKES
Easy and tasty, especially with leftover fish, which is what I used.
I used a mix of crackers and potato flakes, and doubled all the spices and aromatics (as I usually do for NYT recipes). Also added a dollop of zhoug for herbaceousness and a bit more flavor to hold up to the salmon. I didn’t use the mayo as the salmon was already pretty fatty, and the mixture was holding together well.
(I think I might have found it trickier to bind with just cracker crumbs and egg, but I will try it next time with a white flesh that’s not as soft as salmon.)
