HBE & tuna salad.
Lately I’ve been eating TJ’s cracked wheat sourdough toasted with decent butter and sliced fresh tomato.
Your toasts look great! I would absolutely destroy the tuna salad one. Was the distribution of yolk/whites on this one intentional? I know what half I want.
My mom always made this for me when I was sick. And a cup of tea.

I’d love to try bottarga.
I love mixing fruit and cheese flavors, especially on toast. Toast, butter, honey and chevre, or any decent goat cheese, and I’m good.
Dude, come to Sardinia then. Bottarga is a common ingredient there. They even put it on pizza. I had that several times, and once “double bottarga”. That’s with both grated and shaved from a roe sac. I absolutely enjoyed (all the things with bottarga in) Sardinia.
Btw, you can try making bottarga at home. Need to have access to fresh roe sacs (must be intact, as in not torn).
Someone had to do it:
Grilled cheese. Any variation, really — from the most basic to more pimped out versions. Here’s one with rosemary ham & Calabrian chili mayo.
Sautéed mushrooms and melted Taleggio on a rustic slice of bread.
Great combo.
