I made a half batch and added a pound of shrimp and a 4 oz. can of drained Hatch Chiles (would add more chiles next time) before baking in the oven. I love this recipe so much!
After a few nights out with friends, it’s back into the kitchen at casa lingua. Fake summer pretty much ended today with a massive downpour, and temps dropping to more seasonal numbers. At least I won’t be missing any good weather post-surgery ![]()

That’s a feast!
Pork tenderloin slathered with olive oil and liberally rubbed with Ras al Hanout and mango powder (which I got as a gift many years ago but is still viable). Roasted at 375° until done.
Meanwhile, green beans, onions and red bell peppers sauteed in olive oil and butter with a seasoning mix of savory, marjoram, garlic powder, and s/p.
A medium shallot was sauteed and a diced Ataulfo mango was added, then that was added to reheated Basmati rice, with chopped pistachios on top.
Pork tenderloin sliced and drizzled with a mango balsamic glaze.
Not a bad way to use up some of the bits and bobs I tend to pick up at Home Goods discovered tucked away in my pie safe. It’s a sickness, I know.
Wine.
Artichokes don’t usually make it up here so my sister sent me some for my birthday. Huge and delicious for dinner tonight!
ETA: with a martini, lots of ice.

I’ve been recuperating from major surgery. I got a clean bill of health Friday so I can get on with my life. Knock on wood. I made sure I had plenty of leftovers in the freezer so that I would have something easy to fix for dinners.Today was a balmy 65 degrees so I decided to grill. Chicken thighs with aji verde sauce, fried potatoes, onions and peppers, and a salad of mixed greens, tomatoes, , red onion, muffuletta salad, sherry vinegar & oo dressing. A glass of Lambrusco to celebrate.

Fried tilefish with shallot/lemon/caper/butter sauce. Spinach with some horseradish sour cream dressing I have to use up, so I made creamed spinach of a sort. Not too bad!

Jerusalem artichokes are probably my favourite summertime dinner! When I’ve finished cooking them I wait until they’ve cooled down a bit then open them up a bit to remove the choke. Then I fill up the cavity with dipping sauce like tzatziki or baba ganouj (sp?) or spinach dip.
