This sheetpan meal of mini meatloaf , BBQ sauce topping, - ground chicken in place of beef , mustardy potatoes and cauliflower (since my broccoli was AWOL ). Very easy and flavorful, ready in 45 minutes.
Today’s lunch was a Greek salad and iced tea using a mixing bowl as a serving bowl again. I have to dine and dash since I’m going to a market this afternoon. Maybe tomorrow I’ll use a plate ![]()
2 egg scramble from my buddy’s hens with sweet & green peppers & baby bellas sautéed in lamb fat & ghee. Was too lazy to also chop up parsley ![]()

There’s a tiny bit! I didn’t have a problem with less cheese - the tomato sauce was very tasty.
Today’s lunch was a salad of purple cabbage and Brussels sprouts with evoo, chopped walnuts and goat cheese.
Repeated/reheated for today’s lunch. Meatloaf was even better after a night in the fridge.
I also enjoy a Pizza Marinara, sometimes simple is just the right call!
