I made a spinach and Munster omelet drizzled with chipotle Tabasco. I have been adding cornstarch slurry to the egg mixture and it keeps it nice and tender, not leathery.
A Filipino-style pancit to clean out the veggie bin: bean sprouts, cabbage, carrots and scallions. Instant ramen for noodles, and Oregon bay shrimp and eggs for protein. Sauce comprised of the usual suspects (soy, sesame oil, oyster sauce, etc.). Served with homemade chili crisp.

Sounds great. Do you ever see Red Fox Leicester any more? TJ’s used to have it, and it was excellent.
We can find Red Fox Leicester up here in Canada. Unfortunately, we don’t have TJ’s. I haven’t been to a TJ’s since my last visit to Boston in 2018!

I found some local peaches that I stashed in the fridge in late august. Brought them out and let them warm back up for a day or two.

this morning we did our home-spun Egg McMuffin with Sausage.
it’s really easy - but the sausage thing has to be done in advance and an egg ring is needed.
nuke the frozen sausage patty - 3 mins at 2 + 30 secs at 3 just before use

toast the English muffin, fry the egg in the ring, bust the yoke, flip to finish
as the fry starts, toast the English muffin
sausage on bottom muffin,
then egg,
then cheese,
then 15 secs at microwave “HIGH” to melt cheese
